Our roasting

We start with the raw leaf. The roast is ours to learn, document, and refine.

A distinctive product needs a process that can be repeated. We are building ours from the material up.

TEXAS YAPA’s production model begins with dried, unroasted yaupon. Finished roasted yaupon from another company may help us understand the wider market and compare sensory experiences, but it is not the product we intend to resell. Our product will come from our own controlled roasting work.

Raw material evaluation comes before roast-profile decisions.

Understand the incoming leaf

Before a batch enters the roaster, we want to know its supplier and origin, harvest timing, drying method, moisture, leaf-to-stem ratio, lot identity, and any available quality documentation. Different lots may behave differently. Traceability starts at the source.

Run controlled trials

Each trial should record the raw-material lot, starting mass, equipment, temperature, duration, cooling approach, finished mass, yield, cut size, and sensory observations. We will compare trials systematically and repeat promising results to see whether they are reproducible.

Let the product define its expressions

Light, medium, and dark are possible roast directions—not finished product names or approved profiles. We will only introduce roast expressions once the process and cup quality are developed, tasted, and documented. Tasting notes will come from actual evaluation, not from assumptions about what a roast ought to taste like.

Quality continues after roasting

Cooling, sizing, storage, packaging, and finished-product checks all affect the final experience. We are treating those as part of the process, not as details to solve after the roast is finished.
